Eppure le preparo con una discreta frequenza perché amo le polpette, che siano di carne, di pesce o di verdure, e mi piace crearne spesso di nuove. Da quando ho scoperto la tecnica di cottura della carne a bassa temperatura, grazie a questo libro: "Tenera è la carne cotta a bassa temperatura" di Annemarie Wildeisen, me ne sono innamorata.  La carne rimane tenerissima e succosa.  Il colore rosato non indica poca cottura, ma la perfetta distribuzione dei succhi, dovuta alla dolce cottura.
